Buffalo Chicken Mac Bake with Crouton Dust and Crispy Onion Finish

Ingredients

  • Dry elbow pasta
    2 lb
  • Chicken, cooked & chopped
    3 lb
  • Buffalo sauce
    1.5 cup
  • Ranch dressing
    1 cup
  • Shredded cheddar or jack cheese
    2 lb
  • Milk
    2 cup
  • Butter
    .5 cup
  • Salt & pepper, as needed

CRUNCH + FINISH (FRESH GOURMET)

  • Croutons, pulsed into coarse crumbs (crouton dust)
    4 cup
  • Crispy Onions
    2 cup
  • Optional: Salted tortilla strips (adds extra texture variation)
    2 cup

Preparation

Holding tip: Keep the crunchy topper separate if holding longer than 30 minutes, then finish right before service.

Cook pasta to just under al dente, drain.

Toss chicken with buffalo sauce and ranch.

Combine pasta, milk, butter, 1 1/2 lb cheese, chicken. Pan it.

Top with remaining cheese, crouton dust, fried onions (and tortilla strips if using).

Bake at 350°F until hot and bubbling, about 15 to 20 minutes.
