Preparation
Juicy gochujang-glazed chicken on a toasted bun with quick pickles, a savory
crunch layer, and a baked cheese crisp “crown.”
Holding tip: Hold cooked chicken hot in a pan, glaze fresh to order. Keep crispy toppings dry
and add at build.
Quick pickle: Whisk vinegar, sugar, salt. Toss with cucumbers (and chopped golden
raisins if using). Hold 30 minutes.
Glaze: Whisk all glaze ingredients. Reserve 1 cup for finishing, use the rest for cooking.
Cook chicken: Season chicken. Sear on griddle with oil, cook through. Brush with glaze
during the last 2 to 3 minutes until glossy.
Build: Bun, chicken, pickles, sprinkle fried onions and fried garlic, top with a baked
cheese crisp, close.
