Gochujang Honey Chicken Sandwich with Garlic Onion Crunch and Cheese Crisp

Ingredients

  • Chicken thighs, boneless skinless (or breasts, pounded)
    4 lb
  • Neutral oil
    .25 cup
  • Salt & Pepper, as needed

  • Brioche buns, split and toasted

GOCHUJANG HONEY GLAZE

  • Gochujang
    0.25 cup
  • Honey
    0.5 cup
  • Soy sauce
    .333 cup
  • Rice vinegar
    .25 cup
  • Garlic, minced
    2 tbsp
  • Ginger, grated
    2 tbsp
  • Sesame oil
    1 tbsp

QUICK PICKLE

  • Cucumbers, thinly sliced
    2 lb
  • Rice vinegar
    1.5 cup
  • Sugar
    .5 cup
  • Salt
    2 tbsp
  • Optional: Golden raisins, chopped (for sweet pop)
    .5 cup

CRUNCH + FINISH (FRESH GOURMET)

  • Crispy garlic bits
    1 cup
  • Crispy onions
    1.5 cup
  • Baked cheese crisps
    10 pieces

Preparation

Juicy gochujang-glazed chicken on a toasted bun with quick pickles, a savory
crunch layer, and a baked cheese crisp “crown.”

 

Holding tip: Hold cooked chicken hot in a pan, glaze fresh to order. Keep crispy toppings dry
and add at build.

Quick pickle: Whisk vinegar, sugar, salt. Toss with cucumbers (and chopped golden
raisins if using). Hold 30 minutes.

Glaze: Whisk all glaze ingredients. Reserve 1 cup for finishing, use the rest for cooking.

Cook chicken: Season chicken. Sear on griddle with oil, cook through. Brush with glaze
during the last 2 to 3 minutes until glossy.

Build: Bun, chicken, pickles, sprinkle fried onions and fried garlic, top with a baked
cheese crisp, close.
