Orange Sesame Chicken Grain Bowl with Dried Cherries and Glazed Walnuts

Ingredients

  • Grains (jasmine rice, brown rice or farro), cooked
    12 cup
  • Chicken thigh, bite size pieces
    10 lb
  • Broccoli florets
    10 cup
  • Carrots, shaved or matchstick
    4 cup
  • Scallions, sliced
    1.5 cup

ORANGE SESAME SAUCE

  • Orange juice
    2 cup
  • Soy sauce
    .75 cup
  • Brown sugar
    .5 cup
  • Cornstarch slurry (3 Tbsp cornstarch + 3 Tbsp water)
    6 tbsp
  • Garlic, minced
    2 tbsp
  • Ginger, grated
    2 tbsp
  • Sesame oil
    1 tbsp

CRUNCH + FINISH (FRESH GOURMET)

  • Dried cherries
    1.5 cup
  • Glazed walnuts
    2 cup
  • Optional: Crispy jalapeño bits (for extra heat)
    .333 cup
  • Optional: Sesame seeds
    .333 cup

Preparation

Menu note: This bowl can also become lettuce wraps or a noodle bowl using the same chicken and sauce.

Roast or steam broccoli until crisp-tender.

Sear chicken on griddle. Simmer sauce ingredients (except slurry), whisk in slurry to thicken, toss chicken in sauce.

Build Bowl: grains, broccoli, carrots, sauced chicken.

Finish: dried cherries, glazed walnuts, scallions (and jalapeño bits if desired).
